Ingredients:
1 9-inch pie crust
3 cups pureed cooked pumpkin
1 1/4 cups condensed milk
3/4 cup egg whites, whipped
2 teaspoons vanilla
3/4 cup brown sugar
1 1/2 tablespoons sugar
3/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
- Preheat the oven to 350°F.
- Mix the sugar, ginger, cinnamon and nutmeg in a large bowl.
- In another bowl, mix the pumpkin, milk, and vanilla. Fold in the whisked egg whites. Stir the mixture until smooth then combine it with the sugar and spices.
- Pour the completed mixture into the pie crust then bake for 45-50 minutes, until the filling is set and the crust is golden.
Leave to cool and then serve. Delicious!
